Beef Bourguignon Slow Cooker Recipe


Ingredients:

- 2 lbs beef chuck roast, cut into cubes

- 1 onion, chopped

- 2 carrots, sliced

- 2 cups mushrooms, sliced

- 3 cloves garlic, minced

- 1 cup red wine

- 2 cups beef broth

- 2 tbsp tomato paste

- 1 tbsp Worcestershire sauce

- 1 tsp dried thyme

- Salt and pepper to taste

- Fresh parsley for garnish


Instructions:

1. In a slow cooker, combine beef chuck roast, chopped onion, sliced carrots, sliced mushrooms, and minced garlic.

2. In a bowl, mix red wine, beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Pour over the beef and vegetables.

3. Cover and cook on low for 8 hours, or until beef is tender.

4. Garnish with fresh parsley before serving. Serve hot over mashed potatoes or egg noodles.
