Instant Pot Seafood Paella Recipe
Ingredients:
- 1 lb mixed seafood (shrimp, mussels, squid)
- 2 cups Arborio rice
- 4 cups seafood broth or chicken broth
- 1 onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 cup frozen peas
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
1. Set Instant Pot to sauté mode. Sauté onion, bell pepper, and garlic until softened.
2. Stir in Arborio rice and smoked paprika. Cook for 1 minute.
3. Pour in seafood broth (or chicken broth). Stir well.
4. Close the lid, set to high pressure for 6 minutes.
5. Quick release pressure. Stir in mixed seafood and frozen peas.
6. Close the lid and let the residual heat cook the seafood for approximately 5 minutes. Make sure food is fully cooked.
7. Serve with lemon wedges.
