Crockpot Lentil Soup Recipe
Ingredients:
- 2 cups dried lentils, rinsed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1 can (15 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Place dried lentils, chopped onion, sliced carrots, sliced celery, minced garlic, diced tomatoes, dried thyme, smoked paprika, salt, and pepper in the crockpot.
2. Pour in vegetable broth. Cover and cook on low for 6-8 hours, or until lentils are tender.
3. Adjust seasoning if needed before serving. Garnish with fresh parsley.
