Instant Pot Tomato Basil Soup Recipe
Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 oz each) diced tomatoes
- 1 cup vegetable broth
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup heavy cream (optional)
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
1. In a large pot or Instant Pot (using sauté mode), heat olive oil. Sauté chopped onion and minced garlic until softened.
2. Stir in diced tomatoes (with juice) and vegetable broth.
3. If using a regular pot, bring to a boil, then reduce heat and simmer for about 20 minutes.
4. If using an Instant Pot, close the lid and set to high pressure for 5 minutes. Allow natural release for 5 minutes, then quick release.
5. Stir in chopped fresh basil leaves and heavy cream if using. Blend soup until smooth using an immersion blender.
6. Season with salt and pepper. Garnish with fresh basil leaves before serving.
