Chicken Curry Slow Cooker Recipe 


Ingredients:

- 4 boneless, skinless chicken breasts, cut into chunks

- 1 onion, diced

- 2 cloves garlic, minced

- 1 bell pepper, diced

- 1 can (14 oz) coconut milk

- 1 can (15 oz) diced tomatoes

- 2 tbsp curry powder

- 1 tsp ground ginger

- 1 tsp ground turmeric

- Salt and pepper to taste

- Fresh cilantro for garnish


Instructions:

1. Place diced onion, minced garlic, and diced bell pepper in the bottom of the slow cooker.

2. Add chicken breast chunks on top of the vegetables.

3. In a bowl, mix coconut milk, diced tomatoes (with juices), curry powder, ground ginger, ground turmeric, salt, and pepper. Pour over the chicken.

4. Cover and cook on low for 6-8 hours, or until chicken is cooked through and flavors are well blended.

5. Serve hot over rice, garnished with fresh cilantro.
