Crockpot Seafood Cioppino Recipe
Ingredients:
- 1 lb mixed seafood (shrimp, mussels, clams)
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 cup seafood broth or white wine
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. In a crockpot, combine onion, bell pepper, garlic, crushed tomatoes, seafood broth (or white wine), and dried oregano.
2. Season with salt and pepper. Stir well.
3. Cover and cook on low for 6-8 hours, or until flavors are blended.
4. Add mixed seafood during the last 30 minutes of cooking.
5. Garnish with fresh basil before serving.
