Crockpot Chicken Tortilla Soup Recipe
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Tortilla strips, avocado, shredded cheese for serving
Instructions:
1. Place chicken breasts in the crockpot. Add chopped onion, bell pepper, and minced garlic.
2. Sprinkle chili powder and cumin over everything. Pour in black beans, diced tomatoes with green chilies, and chicken broth.
3. Cover and cook on low for 6-8 hours, or until chicken is cooked through and shreds easily.
4. Remove chicken breasts and shred using two forks. Return shredded chicken to the crockpot and stir.
5. Season with salt and pepper. Serve hot with tortilla strips, avocado, and shredded cheese.
