Chicken Stew Slow Cooker Recipe
Ingredients:
- 4 boneless, skinless chicken thighs
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup frozen peas
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Place diced onion, sliced carrots, sliced celery, and minced garlic in the bottom of the slow cooker.
2. Lay chicken thighs on top of the vegetables.
3. Pour chicken broth over everything. Season with dried thyme, salt, and pepper.
4. Cover and cook on low for 6-7 hours, or until chicken is cooked through and vegetables are tender.
5. Stir in frozen peas during the last 30 minutes of cooking.
6. Serve hot, garnished with fresh parsley.
