Beef Curry Slow Cooker Recipe
Ingredients:
- 2 lbs beef chuck roast, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 can (14 oz) coconut milk
- 1/4 cup red curry paste
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp curry powder
- 1 cup beef broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. In a slow cooker, combine beef chuck roast, chopped onion, minced garlic, and grated ginger.
2. In a bowl, mix coconut milk, red curry paste, soy sauce, brown sugar, curry powder, beef broth, salt, and pepper. Pour over the beef mixture.
3. Cover and cook on low for 6-8 hours, or until beef is tender.
4. Garnish with fresh cilantro before serving. Serve hot over rice or with naan bread.
