Summer Vegetable Ratatouille Instant Pot Recipe


Ingredients:

- 1 eggplant, diced

- 2 zucchinis, diced

- 1 bell pepper, diced

- 1 onion, chopped

- 3 cloves garlic, minced

- 1 can (15 oz) diced tomatoes

- 2 tbsp olive oil

- 1 tsp dried thyme

- Salt and pepper to taste

- Fresh basil leaves for garnish


Instructions:

1. Set Instant Pot to sauté mode. Sauté onion and garlic in olive oil until softened.

2. Add diced eggplant, zucchinis, and bell pepper. Sauté for 5 minutes.

3. Stir in diced tomatoes and dried thyme. Season with salt and pepper.

4. Close the Instant Pot lid and set to high pressure for 5 minutes.

5. Quick release pressure. Garnish with fresh basil leaves before serving.
