Lentil and Vegetable Soup Recipe
Ingredients:
- 1 cup dried lentils, rinsed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp ground turmeric
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a large pot or Instant Pot (using sauté mode), sauté chopped onion, carrots, celery, and minced garlic until softened.
2. Add dried lentils, diced tomatoes (with juice), vegetable broth, ground cumin, ground turmeric, salt, and pepper.
3. If using a regular pot, bring to a boil, then reduce heat and simmer for about 30-40 minutes until lentils are tender.
4. If using an Instant Pot, close the lid and set to high pressure for 15 minutes. Allow natural release for 10 minutes, then quick release.
5. Adjust seasoning if needed. Garnish with fresh parsley before serving.
