Corned Beef and Cabbage Slow Cooker Recipe


Ingredients:

- 3-4 lbs corned beef brisket with spice packet

- 1 onion, sliced

- 4 carrots, peeled and cut into chunks

- 4 potatoes, peeled and cut into chunks

- 1 head cabbage, cut into wedges

- 4 cloves garlic, minced

- 4 cups water

- 1 bottle (12 oz) beer (optional)

- Mustard for serving


Instructions:

1. Place sliced onion, carrots, potatoes, and minced garlic in the bottom of the slow cooker.

2. Rinse corned beef brisket under cold water and pat dry with paper towels. Place brisket on top of the vegetables.

3. Sprinkle spice packet over the brisket. Pour water and beer (if using) over everything.

4. Cover and cook on low for 8-10 hours, or until brisket is tender.

5. During the last hour of cooking, add cabbage wedges to the slow cooker, pushing them down into the liquid.

6. Remove brisket and vegetables from the slow cooker. Slice brisket against the grain and serve with vegetables and mustard.
