Chicken Cacciatore Slow Cooker Recipe
Ingredients:
- 4 bone-in, skin-on chicken thighs
- 1 onion, sliced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup dry red wine (optional)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Season chicken thighs with salt, pepper, dried oregano, and dried basil.
2. Place sliced onion, bell pepper, and minced garlic in the bottom of the slow cooker.
3. Arrange seasoned chicken thighs on top of the vegetables.
4. Pour diced tomatoes (with juices), chicken broth, and red wine (if using) over the chicken.
5. Cover and cook on low for 6-8 hours, or until chicken is cooked through and tender.
6. Serve hot, garnished with fresh parsley.
