Chicken and Quinoa Soup Recipe
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup quinoa, rinsed
- 6 cups chicken broth
- 2 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. In a large pot or Instant Pot (using sauté mode), sauté chopped onion, carrots, celery until softened.
2. Add diced chicken breasts and cook until lightly browned.
3. Stir in rinsed quinoa, chicken broth, dried thyme, paprika, salt, and pepper.
4. If using a regular pot, bring to a boil, then reduce heat and simmer for about 20 minutes until quinoa is cooked and chicken is tender.
5. If using an Instant Pot, close the lid and set to high pressure for 8 minutes. Allow natural release for 5 minutes, then quick release.
6. Adjust seasoning if needed. Garnish with fresh cilantro before serving.
