Chili Con Carne Slow Cooker Recipe
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- Salt and pepper to taste
- Shredded cheddar cheese and sour cream for serving
Instructions:
1. In a skillet, brown ground beef over medium-high heat until fully cooked. Drain excess fat.
2. Place diced onion, diced bell pepper, and minced garlic in the bottom of the slow cooker.
3. Add cooked ground beef, kidney beans, diced tomatoes (with juices), beef broth, chili powder, ground cumin, salt, and pepper to the slow cooker. Stir to combine.
4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
5. Serve hot, topped with shredded cheddar cheese and a dollop of sour cream.
