Coconut Curry Lentil Soup Recipe
Ingredients:
- 1 cup dried red lentils, rinsed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 tbsp curry powder
- 1 tsp ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. In a large pot or Instant Pot (using sauté mode), sauté chopped onion, carrots, celery, and minced garlic until softened.
2. Add dried red lentils, coconut milk, vegetable broth, curry powder, ground cumin, salt, and pepper.
3. If using a regular pot, bring to a boil, then reduce heat and simmer for about 20-25 minutes until lentils are tender.
4. If using an Instant Pot, close the lid and set to high pressure for 10 minutes. Allow natural release for 10 minutes, then quick release.
5. Adjust seasoning if needed. Garnish with fresh cilantro before serving.
