Caprese Chicken Instant Pot Summer Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
1. Season chicken breasts with salt and pepper.
2. Set Instant Pot to sauté mode. Sauté minced garlic in olive oil until fragrant.
3. Add chicken breasts and brown on both sides.
4. Pour in balsamic vinegar. Close the Instant Pot lid and set to high pressure for 8 minutes.
5. Allow natural release for 5 minutes, then quick release. Top with cherry tomatoes and mozzarella balls.
6. Garnish with fresh basil leaves before serving.
